Philosophy & Terroir

The marriage of California's frontier spirit, coupled with time-honored French winemaking techniques, give depth and nuance to Captûre Wines. For our 2008 Tradition Sauvignon Blanc, we have selected grapes of exceptional quality from two distinct terroirs, Kick Ranch in the foothills of Bennett Valley and the higher-elevation Windrem Ranch in Kelseyville. These special sites yield fruit with a range of Sauvignon Blanc characteristics, including bright citrus aromas and flavors, delicate floral hints, lively minerality and balanced acidity.

Winemaking

With multi-generational experience from Château Latour, our winemaking team understands the methods behind crafting classic Bordeaux-style Sauvignon Blanc with intense fruit from hillside vineyards. Meticulous hand sorting, at a rate of only one ton per hour, ensures that only the finest grapes at peak ripeness are selected.

After destemming, the must is kept on the skins for a 12-hour cold soak in order to enhance the characters of the Sauvignon Blanc. Next, the juice is gently pressed and fermented in stainless steel, which emphasizes the brilliant fruit and maintains optimum acidity. We age the wine on its lees for four months, stirring weekly to reinforce its bright fruit expression and improve mouth-feel.

Winemaker Notes

Our 2008 Tradition Sauvignon Blanc has a pretty core of pink grapefruit, gooseberry and pear accented by appealing minerality and supported by crisp acidity. A rich, full mouth-feel carries distinctive creaminess over the lengthy finish. Try this wine very chilled, and then enjoy its shifting complexity as the wine slowly warms.

40% from the volcanic clay soils of Kick Ranch in the foothills of Bennett Valley.
60% from the rocky, 1400 foot high-elevation slopes of Windrem Ranch in Kelseyville.
Both vineyards are sustainably farmed to Captûre's rigorous field specifications.
